Cooked red beets

Cumin Ground (grinded)
Roughly chop the onions, cut the red beets into cubes, peel the ginger, peel the garlic and finely chop the fresh coriander.
Put the onions, red beets, garlic, ginger, olive oil, lemon juice, dried coriander and ground cumin, salt and pepper into a food processor or blender and blend into a smooth sauce.
Pour the sauce into the slow cooker and cook for 30 minutes on the high setting.
Give the sauce a good stir, add the shrimps and cook for another 10 minutes on high.
Garnish with the fresh coriander.
TIP: This dish is delicious with cauliflower rice.
