Cut the chicken fillet into cubes, chop the onion, slice the carrots and shiitakes, finely chop the garlic and fresh coriander. Crush the lemongrass, grate the ginger and roughly chop the cashew nuts.
Rub the chicken with the curry paste and put it together with the onions, garlic, carrots, shiitakes, lemongrass, ginger, coconut milk and fish sauce in the slow cooker. Mix well.
Put the slow cooker on the low setting and let the curry cook in 6 hours.
Garnish with fresh coriander and cashew nuts.
TIP: This curry is delicious with cauliflower tabbouleh.
