Spiced duck breast fillets

It has only been a year since I ate duck breast for the first time, since then I prepare it more often because it is so delicious. Fortunately, it is also very easy to prepare! While frying the skin side you will see that a lot of fat starts to run out of the duck breast, I usually keep this fat so I can rub my vegetables with it later before roasting or fry some green leafy vegetables in it. This way your vegetables will get a wonderfully rich flavor.

Grate the ginger and press the garlic. Finely chop the fresh mint.

Combine ginger, garlic, mint, cinnamon, cloves, pepper and salt in a bowl and stir together.

With a sharp knife, make incisions in the skin of the duck breast fillets in the shape of a diamond. Only cut the skin, not the meat.

Rub the duck breast fillets with the spice mixture.

Heat a frying pan over medium heat and fry the duck breast fillets on the skin side for about 4-5 minutes until a large part of the fat has run out.

Turn the fillets over and fry for 3 minutes on the other side. Then let the fillets rest for 5 minutes before serving.
