Puree coconut milk with strawberries, maple syrup, gelatin powder, lemon juice and vanilla powder until smooth.
Pour the mixture into a large pan.
Put the bunch of thyme in a cotton bag and close it well. Place the bag in the pan.
Bring to the boil and simmer for 4-5 minutes.
Remove the bag of thyme and squeeze it well above the pan.
Allow the mixture to cool completely in 3 to 4 hours and set in the refrigerator.
Beat the pudding lightly using a hand mixer or food processor and divide the mousse into single dishes.
Put the trays in the fridge for half an hour until you are ready to serve them.
