Coconut oil (melted)
Peel and finely chop the garlic.
Peel and grate the ginger and finely chop the coriander.
Preheat the oven to 400 and line a baking tray with baking parchment.
Peel the sweet potato and cut into cubes.
Cut an inch off the bottom of the asparagus and halve them lengthwise. Place the asparagus on the baking tray.
In a small bowl, stir together the garlic, ginger, coconut oil and fish sauce and spread the mixture over the vegetables making sure they are coated on all sides.
Roast in the preheated oven for 20 minutes until done.
Garnish with the sesame seeds and fresh coriander.
