Sweet potato curry

Cut the onion in half rings, peel the sweet potato and cut it into small cubes, grate the ginger and chop the garlic.

Heat the coconut oil in a wok or skillet and gently fry the onions.

Add garlic and ginger and fry briefly, then add the sweet potato cubes.

Fry the vegetables until the sweet potato begins to soften slightly.

Then add the curry, santen and 250 ml of water.

Bring to a boil and cook until tender in about 5 minutes.

Season with salt and pepper.
