Wash the sweet potato and, keeping the skin on, cut into fries.
Fill a large bowl with warm water and dissolve 2 tsp of salt in it. Let the fries soak in here for 30 minutes, making sure they are completely submerged.
In the meantime, preheat the oven to 425 and cover a baking tray with baking parchment.
Rinse the fries and pat them dry.
Rub the fries with coconut oil and spread them out on the baking tray, making sure that they don't touch each other.
Bake the fries for 15 minutes in the preheated oven. Turn them over and bake again for another 15 minutes until slightly crispy.
Sprinkle the fries with some salt or other herbs/spices, according to taste, before serving.
