Peel the plantain and cut into slices.

Chop the pickles, fresh dill and celery

First make the plantain by frying the slices around golden brown in the coconut oil, in about 2 minutes per side. Season with some salt.

For the tuna dip, combine the tuna with the other ingredients and stir well.
