Wash the zucchini and remove the ends. Take a coarse grater and grate the zucchini over a large bowl. Chop the onion.
Mix the red onion, eggs, coconut flour, sesame seeds, thyme and some salt through the grated zucchini.
Heat 1 tablespoon of coconut oil in a frying pan and add a large spoonful of the zucchini mixture. Bake 4 cookies at a time.
Bake the cookies in 3-4 minutes per side on medium-low heat until golden brown and done.
