Put the bamboo skewers into water for 30 minutes to soak.
Cut the chicken breast into cubes.
Cut the zucchini and mushrooms into slices.
Put all the ingredients for the marinade (except for the parsley and coriander) in a food processor and pulse until you have a smooth mixture.
Chop the parsley and coriander by hand (it looks nicer if the pieces are not too small) and stir through the marinade.
Put the chicken cubes and marinade in a resealable plastic bag and leave to marinade for about 4 hours in the fridge.
Thread alternate pieces of chicken and vegetable on the skewers.
Heat the grill of the BBQ and grill for approximately 15 minutes, turning regularly until the chicken and vegetables are ready.
