Set the oven to the grill mode.
Finely chop the onion, peel and dice the avocados.
In the meantime, mix all the ingredients for the burgers together in a large bowl and set aside, covered, for a while
Wash the tomatoes, cut the top part off and set aside. Then hollow out the tomatoes (you can save the flesh for later use for a sauce, for example). Divide them over the baking sheet and put them under the grill for 5 minutes until they are soft (including the caps).
Then make small hamburgers from the minced meat. They must fit in the tomato.
Heat the coconut oil in a large frying pan and fry the hamburgers in portions. Set aside.
Mix the avocado with the parsley, coriander, pepper and garlic powder in a blender.
Divide the lettuce over the tomatoes, add a tablespoon of avocado mixture on top and a finally add a mini burger.
