Sprinkle the rosemary over the chicken and spread 2 teaspoons of mustard over each chicken breast. Rub this into the meat.
Put some coconut oil in a frying pan, put on a medium-high heat and place the chicken breasts in the pan.
Fry the chicken for 8 minutes.
Meanwhile clean the leek and cut into 3/4 inch rings.
Add the leek to the chicken breasts in the pan and fry until the leek is nearly cooked.
Press the garlic over the chicken and stir.
Pour the coconut milk over the chicken and put a lid on the pan.
Heat the sauce thoroughly.
Finally, stir any remaining mustard through the sauce.
