Lentils

Fry the onion and red pepper in a dash of oil.

Add the tomato paste and fry it briefly.

Then add all other ingredients of the spicy lentils. (optional: mushrooms).

Bring the water to a boil and reduce the heat, let the lentils simmer for a while. Observe the cooking time stated on the package of the uncooked lentils (this can be quite different). Add extra water if the lentils are left to dry.

Tortillas

Mix the cornmeal with lukewarm water and a pinch of salt.

Knead the mixture into a smooth and smooth dough.

Make a nice smooth ball and let it rest for 15 minutes in the fridge (add extra water if the dough cracks).

Make balls the size of a golf ball.

How do I make tortillas without a tortilla press?


Place a sturdy piece of plastic wrap on the counter (or a sandwich bag), place one dough ball on top of it, finish with a new sturdy piece of plastic wrap on top of the dough ball. Use a rolling pin, bottle of wine, or anything else you can roll with and roll out the dough to your desired thickness. Remove the top piece of plastic. Turn the dough out with a round dish / glass / stitch mold (the size of the desired tortilla size). Scrape off the remaining dough and TA DA, a perfect round tortilla. Bake the tortilla directly in the pan, or let it rest covered until you have rolled out all the dough.

Then fry the tortillas on both sides in a hot pan until cooked. Add a dash of oil if necessary. The baking time depends on the thickness of the tortilla, as an indication ~ 1-3 min).

Toppings

Prepare the toppings with which you serve the lentils and tortillas. Cut the bell pepper and red pepper into thin strips, if you have already cut the avocado, sprinkle it with lemon juice (to prevent oxidation and 'browning').
