This delicious and healthy weekday recipe can be made by using just one pan. In other words a win-win-win situation. Not many dishes to wash, very tasty and healthy. What more could you ask for? Lots of vegetables: check and lots of color: check. Vary the vegetables and use chicken instead of turkey for a change.
Coconut oil

Snipper the onion and finely chop the garlic. Dice the zucchini and carrots. Cut the turkey into strips.

Melt the coconut oil in a large frying pan and glaze the onion and garlic.

Add the turkey strips and fry until brown.

Add the vegetables and stir-fry until they are done.

Season to taste with basil, oregano, salt and pepper.
