Orange and chocolate bonbons

The perfect combination: pure chocolate with orange. It might be a good idea to make two batches. As they'll be gone in no-time.

Chocolate pure (> 70% cocoa)

50 g

Orange juice

300 ml

Lemon (the juice)

Honey

Gelatin powder

Make the orange filling by putting the orange juice, honey and lemon juice into a saucepan and whisking in the gelatin powder.

Bring to the boil and immediately take off the heat.

Pour into a container (e.g. an oven dish) making sure that the height of the orange jelly layer is about half of the height of an ice cube tray.

Put in the fridge for approximately 1 hour to set.

Once the orange jelly is set cut into small cubes. (There will be some left but you can eat these as sweets)

Start making the bonbons.

You could, eventually, spray the ice cube tray in with baking oil, rinse it under the tap and leave to dry.

Temper or melt the chocolate and pour half of it into the ice cube tray, moving it round until all the molds covered.

Put into the freezer for a couple of minutes.

Take out of the freezer and place an orange jelly cube on top of each chocolate cube in the ice cube tray.

Pour the rest of the chocolate over the ice cube tray so that all the ice cube molds are full and put into the freezer or fridge to set.

Take bonbons out of the ice cube tray and keep in the fridge.
