Red pepper (hot)
Clean the ginger and grate it.
Clean the mushrooms and cut them into slices, cut the bok choy into thin strips and clean the carrot and cut into thin strips.
Remove the seeds from the red pepper and cut into thin half rings.
Heat a soup pan with 1 tablespoon of coconut oil over medium heat.
Add the ginger and fry for 30 seconds, then press the garlic in the pan and stir well.
Add the mushrooms and cook for about 4 minutes. Then add the carrot, bok choy, turmeric and red pepper and stir well.
Pour in the vegetable broth and bring to the boil.
As soon as the soup is boiling, reduce the heat and let it simmer for 7-10 minutes until the paksoi is cooked.
Serve the soup with a lime wedge and coriander.
