White wine vinegar
Finely chop the chives and parsley and press the garlic.
Cut the avocado flesh into slices.
Put the ground beef into a bowl and knead an egg through the mixture.
Add the garlic, fresh herbs, salt and pepper and knead again.
Make 4 burgers out of the mixture.
Heat a grill pan and fry the burgers until nice and brown on both sides.
Meanwhile poach the eggs.
Bring a pan of water and a bit of vinegar to the boil.
Break the eggs above the pan and let them cook for 5-7 minutes before removing them with a slotted spoon.
To serve the burgers, top each burger with a poached egg and put a bit of mayonnaise on top. Arrange the avocado next to the burgers, or if preferred, on top.
Also goes very well with a side salad and/or tomato.
