Bulgur is a grain and as such we don't eat it in a Paleo diet. However, you can use cauliflower rice in this Turkish salad. This salad is a great accompaniment to all sorts of dishes. It goes well with fish, meat or even as part of a vegetarian meal together with a classic tagine. Mouthwatering!

Snipper the onion and dice the tomatoes, cucumber and grilled pepper.
Put the cauliflower florets into the food processor and pulse until they resemble rice.
Cook the cauliflower rice by stir-frying it together with bit of water in a wok.
Leave it to cool down slightly and stir in the tomato paste.
Add the onion, lemon juice and salt.
Stir the cucumber, tomato and pepper through the rice.
Finish off by adding the parsley and giving the rice a final stir.
