Paleo Christmas Fluted Cake

You can still enjoy a piece of Christmas fluted cake but then completely Paleo proof. Instead of icing sugar as decoration you can use either coconut flour or shredded coconut. So you can eat something nice and sweet with this snack. The dried fruit makes the cake even nicer.

Preheat the oven to 350°F.

Mix the eggs, orange juice, vanilla extract and melted (but cool) coconut oil together in a bowl.

Put the almond flour, coconut blossom sugar and baking powder in a separate bowl and mix together.

Mix the dry ingredients together with the wet ingredients.

Finely chop the apricots and chocolate and stir through the cake mixture.

Pour the cake mixture into a well greased fluted cake pan.

Bake the cake in the preheated oven for 45 minutes. After about 35 minutes take a look at the cake and, if necessary, place a cover over to prevent it baking too quickly.
