Preheat the oven to 325°F and lightly grease a baking tray.
Grate the lemon rind, squeeze the lemon and finely chop the parsley.
Mix the ghee, lemon juice and lemon zest together in a bowl.
In a separate bowl mix the almond flour, herbs de Provence, parsley, garlic, salt and pepper.
Put the pollock into the oven dish.
Spoon over the ghee mixture and scatter the almond flour mixture over the dish.
Bake in the preheated oven for 25 minutes until golden brown and crisp.
