Preheat the oven to 340°F and prepare a baking tray with parchment paper.
Mix all the ingredients for the crust into a dough and roll/push this into a thin square slab on the baking sheet.
Bake this for 15 minutes and then take it from the oven.
Warm up the honey, ghee and coconut milk in a pan and then stir in the vanilla extract and the cinnamon.
Add the nuts and cocoa nibs to the honey and stir until all the nuts are covered with a sticky layer.
Cover the crust that you have made with the honey-nut mixture and let it cool off in the fridge so it can harden.
When the crust has cooled off and hardened, cut it into square cubes or bars. To store the bars you can wrap them in cling film.
