Heat a soup pan on a medium-high heat, melt the ghee and fry the bacon and ham cubes. Put the fried bacon and ham cubes aside and leave the fat in the pan.
Cut the onion into rings and snipper the garlic.
Clean the celeriac and cut into cubes. Cut the broccoli into florets and add to the celeriac in the pan. Fry the vegetables for a couple of minutes.
Add the beef broth and leave to cook for 15 minutes.
Blend the soup with a hand blender. If the soup is too thick add some water.
Finally add the chopped carrot and leek, the crispy bacon, ham cubes and eventually some salt and pepper to taste. Simmer for another 15 minutes.
