Red pepper (sweet)
Bring a pan of water to the boil and hard boil the eggs. Peal and cut into wedges.
Cut the spring onion and leek into rings. Cut the white cabbage into strips and dice the pepper.
Remove the mackerel skin and divide into small pieces.
Mix the olive oil, salt and pepper together until you have a dressing.
Divide the butterhead lettuce over the plates and on top of this the leeks, white cabbage, pepper, silver onions and raisins.
Next divide the egg wedges, mackerel and spring onion over the salad.
Drizzle with the dressing and serve.
