White wine vinegar
Celtic sea salt
Olive oil (mild)
Put all ingredients except the olive oil in a high cup and use your immersion blender to mix them well.
Now add olive oil drop by drop to the mixture as you move up and down with the immersion blender.
Keep doing this until you have a nice thick mayonnaise. (you may have some olive oil left or you may need something more)
Put the mayonnaise in a clean and well-sealed pot. You can store the mayonnaise in the frdige for about 1 week.
