Pizza frittata

Your favorite pizza but then as a frittata! The advantage being that you can eat it anytime of the day. As breakfast, lunch, dinner or snack. This pizza frittata is nearly too good to be true. For a change use the same ingredients as you used to have on your favorite pizza (or still have on the Paleo version). Bet you it's nice!

Beef Salami

Strained tomatoes

Preheat the oven to 350°F.

Grease an oven dish with olive oil.

Cut the red pepper into strips and divide over the bottom of the dish.

Slice the spring onion into thin rings and sprinkle over the red pepper. Place the slices of beef salami on top.

Beat the eggs and tomato ketchup together in a measuring jug.

Season to taste with basil, salt and pepper. Mix once more and pour over the mixture in the oven dish.

Bake the frittatta in the preheated oven for 25 minutes.

If it's not quite set, bake for a little longer. You can put a sheet of aluminum foil over the top to stop it getting too brown.
