Make a good impression (on your family) during dinner with this delicious pork tenderloin! By using bacon the pork tenderloin remains tender and juicy and it combines perfectly with the sweetness of the onion and plum sauce. This dish goes well with a fresh green salad.
Red wine vinegar
Preheat the oven to 325℉.
Wrap the pork tenderloin in the bacon and hold this together with toothpicks.
Heat 1 tablespoon of coconut oil in a frying pan on a high heat and fry the pork tenderloin, turning occasionally, for approximately 2 minutes until brown on all sides.
Take the pork tenderloin out of the pan and place in a roasting pan.
Bake in the preheated oven for about 20 minutes or until the internal temperature of the meat is 140℉.
Slice the onion into thin strips and press the garlic. Destone the plums and cut into small pieces.
Use the same pan in which you fried the pork tenderloin.
Add the second tablespoon of coconut oil to the frying pan. Put on a medium-high heat and add the onion, garlic, the plum pieces and rosemary.
Saute the onions until soft (approximately 6 minutes).
Add the chicken stock and bring to the boil.
Meanwhile mix the arrowroot and vinegar in a bowl.
As soon as the sauce boils pour in the arrowroot mixture and stir continously until completely smooth.
Leave the sauce to reduce to the required consistency and take it off the heat.
Cover and set aside until you are ready to serve the pork tenderloin.
