Cut the avocado lengthwise, destone and put the flesh into a small bowl.
Finely mash the avocado.
Finely chop the parsley.
Add the parsley, lime juice, chili flakes and a pinch of salt and pepper to the avocado and mix well.
Heat a grill pan on a medium-high heat.
Grill the portobellos for a few minutes on each side until done.
Serve the portobellos with a good dollop of chimichurri. Enjoy!
