Cut the pumpkin into cubes.

Grease 2 trays with some olive oil.
Divide the pumpkin on the trays.
Beat the eggs with the almond milk.
Add oregano and a pinch of salt and stir.
Divide the egg mixture between the trays.
Bake the frittata in the center of the preheated oven for 20 minutes.
