Cut the stem and the seeds from the bell pepper.
Peel the sweet potatoes and the pumpkin.
Cut the bell pepper, sweet potatoes, pumpkin, zucchini and eggplant into cubes of ¾ inch.
Peel the carrot and cut into cubes, clean the onion and chop it.
Heat the coconut oil in a large pan and fry the carrot and onion in it for about 8 minutes.
Add the coconut oil, the remaining vegetables, the tomato cubes, the herbs and a pinch of salt and pepper. Stir well and let it simmer for 10 minutes with the lid on the pan.
Remove the lid from the pan and let the ratatouille simmer for another 15 minutes, until all vegetables are tender.
