Smoked bacon strips
Fry the bacon strips in a dry frying pan.
In a separate frying pan roast the pine nuts on a medium-high heat for a couple of minutes.
Slice the red beets in very thin slices. You can use a mondoline for this.
Lay the sliced red beets on the 4 plates.
Put some arugula on top.
Drizzle with the olive oil.
Add the pine nuts and the crispy bacon.
