Preheat the oven to 375°F.
Wash the beets well and pat them dry.
Separate the thyme leaves from the stem.
Mix this in a bowl with the balsamic vinegar, olive oil and a pinch of pepper and salt.
Place each beet on a piece of aluminum foil and add a crushed clove of garlic.
Pour over half a tablespoon of the dressing and fold the package, so it is closed.
Place the beets on the baking tray or in a baking dish and roast them in the preheated oven for 60 minutes.
You can remove the skins from the beets before serving them.
