A quiche is a very delicious and enjoyable meal. This version containing salmon, leek and dill is most probably our favorite! Gorgeous tastes that seem to complement each other. That is our idea of a good meal. Make a fresh salad as a side dish.
Preheat the oven to 400°F and grease an oven dish.
Put the tapioca, coconut flour and 1 teaspoon of salt into a mixing bowl and mix well. Add the olive oil and warm water and mix until it forms a dough.
Line the bottom and sides of the oven dish with the dough and put in the oven for 10 minutes.
Put the eggs, almond milk, salt and pepper into another mixing bowl and whisk until combined.
Slice the smoked salmon into thin strips, dice the tomatoes, cut the leek into rings and finely chop the dill. Add these ingredients to the egg mixture and mix well.
Pour the egg mixture into the precooked dough casing in oven dish and put in the oven at 325°F for 15 minutes until the surface is golden brown.
