Finely dice the salmon. Snipper the pickle and the onion and finely chop the chives and parsley.

Mix the salmon, pickle, onion, chives, parsley, mustard, oil, vinegar together and season to taste with the salt and pepper.

Cut the heart out of the lettuce and arrange the leaves loosely on a tray or on a couple of plates.
