Salmon with a herbed crust and spinach salad

Personally my favorite! A delicious combination of flavors. The mustard givesrecipe the salmon a nice kick and this goes well with the fresh dressing on the spinach salad. This recipe only take minutes to prepare and is thus a good and delicious for a busy weekday. You'll thoroughly enjoy it :-)

Almond flour

Fresh parsley

Salmon fillet

Mustard

Lemon juice

Spinach

Mixed lettuce

Red onion

Finely cut the parsley and slice the onion into thin rings.

Preheat the oven to 425°F and line a baking tray with aluminum foil.

Mix the almond flour with the parsley, salt and pepper and 2 tablespoons of olive oil.

Place the salmon fillets on the baking tray and season to taste with salt and pepper.

Spread half a tablespoon of mustard over the salmon fillets. Sprinkle the herb mixture over the salmon fillets and press down lightly.

Roast for about 10-15 minutes in the preheated oven.

Meanwhile make the spinach salad. Put the remaining olive oil into a large bowl and whisk together with the lemon juice and salt and pepper to taste.

Add the spinach, mixed lettuce and the red onion and toss a couple of times.

Serve the salmon with the spinach salad.
