Mix all the herbs and spices in a bowl and rub it into the meat.
Cut the chili peppers into pieces, the cabbage into strips, squeeze the lime and snipper the onion.
Heat the coconut oil in a frying pan and sear the meat.
Put the meat in the Crock Pot.
Add the tomato cubes and chili peppers and leave to cook on the low setting for 6 hours.
Using 2 forks shred the meat.
Mix the mayonnaise with the lime juice and put this in a big salad bowl together with the cabbage and onion. Mix well.
Season to taste with salt and pepper.
Serve shredded beef on a bed of cabbage salad.
Nice with a dollop of guacamole on top!
