Preheat the oven to 160 degrees Celsius. Line a springform tin of 18 cm with baking paper.

Stir almond flour and baking powder together in a bowl.

Add olive oil, honey, vanilla extract, eggs and the lemon zest and mix well.

Cut the cores out of the apples and the apples (including skin) into cubes. Spoon it through the batter.

Divide the batter over the spring form and press. Sprinkle with the almonds.

Bake the cake in the middle of the preheated oven for 65-75 minutes.

Let the cake cool in the spring form for about 20 minutes after baking.
