Coconut oil (melted)
Bake the bacon until crispy and drain on a paper towel.
Mix almond flour, coconut flour, baking powder and salt together.
In another bowl, mix egg and coconut oil well together. Add the wet ingredients to the dry ingredients while stirring.
Crumble the bacon and chop the chives. Add to the dough and knead well. Let the dough rest in the refrigerator for 30 minutes.
Preheat the oven to 180 degrees Celsius. Line a baking sheet with a sheet of parchment paper.
Roll out the dough to a half centimeter thick slice and cut out circles (this is easiest between 2 sheets of baking paper). Place the cookies on the baking paper.
Bake the cookies in the center of the preheated oven for 15 minutes, until golden brown and cooked through.
