Cucumber rolls with hummus

Hummus

Drain the chickpeas.

Place all hummus ingredients in a food processor and mash until smooth. Taste and add some extra salt and pepper if necessary.

Make rolls

Cut the cucumber ends and slice thinly lengthwise. Stop when these break through the seed lists and then scrape on the other side.

Chop the walnuts.

Spread each cucumber ribbon with hummus, spread some of the finely chopped walnuts on the center. Roll them up and place on a plate.

Garnish with the remaining walnuts and the pomegranate seeds
