Preheat your waffle iron in position 4 (My waffle iron has 5 settings, so it is almost at the hottest).

In a bowl, mix almond flour, tapioca, and baking soda together.

In another bowl, mix the wet ingredients together; egg, yogurt, vanilla extract and maple syrup.

Pour the wet ingredients into the dry ingredients and mix well into a nice even batter.

Grease your waffle iron slightly with butter or oil. Pour some batter into your waffle iron (about 2 tablespoons) and close the lid. Bake for a few minutes until the waffles are golden brown. (be careful not to pour too much batter into your waffle iron. A little too little rather than too much and it will overflow)

Repeat until all batter is used up.

If you do not eat them immediately, let the waffles cool on a wire rack.
