Ras el Hanout
Cut the zucchini and bell pepper into small cubes. Clean the leeks well and cut in half rings. Chop the garlic clove or squeeze it.
Heat the oil in a stockpot. Add all vegetables and garlic and cook for 3 minutes. Add the ras el hanout and fry for 1 minute.
Add the vegetable stock and bring to a boil. Turn the heat to low once the soup is boiling and continue cooking for 12 minutes.
You can still mash the soup before serving with the hand blender.
