Chop the herbs. Beat the eggs in a bowl and stir in the herbs. Add a pinch of salt and pepper and stir.

Heat a skillet with a little olive oil over medium heat. Bake an omelet from the egg-spice mixture.

Clean the mushrooms and cut into slices. Cut the tomato into large pieces.

Heat some olive oil in a frying pan.

Fry the mushrooms in it. Add the shrimps and the tomato and fry briefly.

Place the omelet on a plate and divide the mixture in half. Close the omelet and serve immediately.
