Sun dried tomatoes
Preheat the oven to 200 degrees Celsius.
Place the chicken fillet in a baking dish and brush with the pesto. Bake the chicken in the middle of the oven for 20 minutes.
Divide the lettuce over a plate (or 2 plates). Cut the sun-dried tomatoes into strips and spread over the lettuce.
Cut the chicken into slices and place on the lettuce. Sprinkle with the pine nuts.
Sprinkle to taste with the olive oil.
