Peel the pumpkin and cut into cubes.
Heat 2 tbsp (olive) oil in a pan and gently fry the pumpkin.

Add Italian herbs, paprika, tomato cubes and a good pinch of salt and pepper and stir. Put the lid on the pan and let it simmer on a small fire for 20-30 minutes. Stir occasionally.
The black olives can pass through for the last 5 minutes.
Serve the ratatouille with the goat cheese.
