Cut the red cabbage into thin strips.
Put the red cabbage in a colander and sprinkle 1 tablespoon of salt over it. Use your hands and squeeze the red cabbage strips several times. Let the red cabbage stand for an hour.
Hold the colander under the tap so that most of the salt rinses off the red cabbage. Shake several times because we want as little excess water as possible. Place the red cabbage in a bowl.
Squeeze the lemon.
Pour the lemon juice, olive oil and 1 tsp salt over the red cabbage. Mix well and let stand for at least 1 hour.
