Put the spinach together with the eggs in a blender and pulse until you have an even green mixture. Season with a pinch of salt and pepper.

Heat a frying pan with the oil and pour half of the spinach mixture into it.

Bake over low heat for about 3 minutes until the top begins to set. Turn the wrap over and bake this side for 1 to 2 minutes. Repeat with the remaining spinach mixture.

Let the wraps cool completely.

Divide the smoked salmon in the middle of the wrap and roll up tightly.
