It sounds quite posh: sole a la meuniere? Actually it's just a tasty "normal" piece of fish in clarified butter.... But the posh name makes it sound much nicer. This sole is delicious on a weekday evening, but wouldn't be out of place during a formal dinner with friends or family.

Dab the fish dry with a kitchen towel or a piece of paper towel.

Sprinkle the fish on both sides with almond flour and salt and pepper. Shake off the excess flour.

Melt 1 tablespoon of ghee in a frying pan and fry the fish until golden brown on both sides.

Finely chop the parsley.

Take the fish out of the pan and set aside.

Spoon the rest of the ghee in the pan, together with the lemon juice and parsley. Bring to the boil and immediately take it off the heat.

Place the fish on a plate and serve with the sauce.
