Cold and wintery weather just cries out for a warm and nourishing soup, like this spicy vegetable soup. Prefer it less spicy? Only use 1 tablespoon of chili powder. Handy to know; this recipe is enough for 2 x 4 people. So you can freeze in the other half and it will keep for up to 2 months in the freezer.

Cut the cauliflower in small florets and roughly snipper the onion. Dice the carrot and cut the leek into rings.

Heat the ghee in a large soup pan and lightly fry the onion until glazed.

Add the diced carrot, leek and cauliflower and fry for a couple of minutes on a low heat.

Stir the chili powder and thyme through the vegetables and add the tomato cubes including the liquid.

Pour the beef broth into the pan and bring to the boil.

Leave the soup to simmer on a low heat, stirring occasionally.

Season the ground beef with some salt and pepper and roll little balls with it using wet hands.

After cooking for 20 minutes, add the balls to the soup.

Season to taste with salt and pepper.
