Lean bacon strips
Chop the onion and dice the zucchini.
Heat the coconut oil in a stockpot and fry the bacon strips.
Spoon them from the pan onto a piece of kitchen paper and drain.
Leave the fat in the pan and fry the onion and zucchini for a few minutes.
Pour in the stock, bring to the boil and simmer on low heat for 5 minutes.
Add the spinach in parts and stir until the leaves have shrunk.
Mash the soup with a hand blender and season with salt and pepper.
Spoon the soup into bowls and sprinkle the bacon on top.
