Steamed fish parcels with pak choy

By steaming the salmon in this delicious marinade it is not only astonishingly delicious but at the same time amazingly healthy. The salmon goes well with cauliflower rice .

Finely chop the garlic and ginger and slice the pak choy into strips. Grate and squeeze the orange.

Mix the orange juice and the grated rind together wit the garlic, ginger, mustard and olive oil. Season to taste with salt and pepper.

Lay two sheets of baking parchment on top of each other, and place one salmon fillet in the middle.

Brush the salmon with the half of the marinade and divide the pak choy leaves over it.

Fold the paper over the salmon (with the seam at the top) until you have made a parcel. Tie the parcel together with some kitchen string.

Repeat the above with the second salmon fillet.

Put 1 inch of water into a wok and place a steam rack into the wok.

Bring the water to the boil, lay the parcels on the steam rack (without letting the rack touch the water), put the pan lid on and steam for approximately 15 minutes.
