Christmas is a time for spending with your loved ones. Cooking, delicious food but most of all enjoying yourselves. That's why we have chosen recipes whereby you don't have to spend the whole evening in the kitchen! Make some oven-roasted vegetables along with the chicken and a vegetable mash and you'll have a feast on the table.
Fresh thyme (fijngesneden)

Preheat the oven to its highest setting.
Half the tangerines and put these together with the rosemary inside the chicken.
Rub the chicken with olive oil, salt and pepper.
Mix the ghee with the finely cut thyme and using your fingers, spread this underneath the skin of the chicken. It takes a little time and is a bit messy but is well worth it.
Roughly cut the vegetables into chunks and divide over the oven dish. Put the chicken on top and cover with aluminum foil.
Put the oven dish in the oven and turn the temperature down to 375℉. After 60 minutes remove the aluminum foil and bake the chicken for a another 20 minutes until the chicken is nice and brown.
Take the chicken out of the oven and serve with the vegetabes and other tasty side dishes (for example, the recipe for the sweet potato gratin).
